“Our Chardonnay grapes are left on the vine longer to ripen in maritime climates tempered by warm sun to develop rich, concentrated flavors. Fermentation occurs with 100% French Oak to complement the natural flavors. After primary fermentation is complete, the lees is stirred while the wines undergo malolactic fermentation, resulting in the smooth, rich mouthfeel and overall depth of the wine. ‘Spinning cone’ technology is used in the final winemaking stage to reduce alcohol content without losing aroma, resulting in a well-balanced, richly flavored, and complex wine with a lower alcohol level.”
